JOB TITLE: Sous Chef

REPORTS TO: Executive Chef

SUMMARY: Assist the Executive Chef to manage with excellence the entire kitchen
including all administration related matters, to ensure high food quality and presentation and controlling all relevant expenses.

RESPONSIBILITIES:
• To upgrade and maintain the quality of food in the operation
• To assist the Executive Chef de cuisine in implementing a higher standard of production and operation. Implement new menu requested by Executive Chef
• To supervise the daily operation of each section
• To coach and train subordinates with regard to food quality and presentation.
• To introduce more effective and efficient methods of production
• To control food cost and other expenses in his/her department by closely motoring food requisitions and business forecast
• To develop and maintain a high level of communication within his/her department
• To control and monitor manning levels in his/her section based on business forecast
• To report all customer feedback both positive and negative to chef de cuisine
• To ensure that a high level of hygiene, and sanitation is maintained in his/her department through close coordination with the executive housekeeper and chief steward
• To comply with all company policies

SPECIFICATIONS:
• Good working experience in well known hotels or restaurants at least 6 years
• Experience in field is a necessary and experience in Ireland will be a plus
• Good communication skills
• Excellent knowledge
• Good team leader and motivation
• Creative and aware of new food trends
• Hand’s on personality
